Wafu pasta w/ Wood Ear Mushroom


Japanese Style Pasta or Wafu Pasta, brings a lot the focus of umami from Japanese cooking and creating a union with western flavors. For this recipe we're looking at our Seasoned Wood Ear Mushroom, although it is already great on its own with rice, this dish brings that savory flavor to pair with pasta. Adding mushrooms to this dish will help bring more earthy flavors overall and you can use any of your preferred mushroom to this dish.

【Wafu pasta w/ Wood Ear Mushroom】

Seasoned Wood Ear Mushroom 50g
Preferred Mushrooms 50g
Pasta 100g
Olive Oil 30cc
Sliced Garlic 15g
Mentsuyu (Noodle Soup Base) 10cc
Chili pepper A Pinch
Salt & Pepper A Pinch

How to Make

  1. Boil pasta to al dente or to your preferred texture. Making sure to keep a bit of pasta water.
  2. While pasta is boiling, heat pan and add olive oil.
  3. Stir fry olive oil, sliced garlic, and mushroom.
  4. Once the mushroom is cooked, add Mentsuyu, Kikurage Tsukudani, salt & pepper, and simmer for 10-15 seconds.
  5. Add cooked pasta to the sauce and add a bit of boiled pasta water and mix well.
  6. Plate and sprinkle with chili pepper.
